Ben is a Burnt Oak resident and shares his Pink Hummus recipe!
Hummus is chickpeas at it's core but I don't agree with chickpeas. An Israeli cousin told me that many hummus recipes (there hummus is a big deal, as I found out in a pilgrimage to Sederot to visit a Humusia or Hummus dispensary) you can switch out chickpeas for soy beans.
Here I was struggling with my iron levels after some health problems caused by internal bleeding and I was told by my doctor to try foods rich in iron. this doesn't have to be red meat. I found red beans in a can costs around 33 p. The red water that comes out I put on the lawn to give it a bit of extra iron.
Recipe:
- 3 cloves garlic (lazy garlic can be used from a jar)
- Juice of 2 lemons
- 2 cans red beans drained and rinsed
- Some olive oil (about half a cup)
- Some tahini (about half a small tub)
- Teaspoon of sea salt / Zaatar (thyme) spice mix
- Add diced garlic to blender and blend
- Add tahini and blend with a little water
- Squeeze the lemons in
- Add beans and ingredients
- Blend
- Refrigerate and serve topped with Zaatar, extra virgin olive oil, and a few spare beans.
