Fatima's Turkish Lentil Soup

Fatima is one of Barnet's Health Champion who has written a cookbook and shares her recipe for Turkish Lentil Soup! 

Turkish Lentil soup

·    1 cup red lentils (approx 150g)

·    1 onion chopped

·    1 large tomato, roughly chopped (or 1 400g tin)

·    ½ tspn red chilli powder

·    ½ tspn cumin powder

·    Salt and pepper to season

·    1tbsp Olive oil

·    1L stock (chicken or vegetable)

·    Salt and pepper

For The Garnish

·    lemon wedges

·    1tbsp crispy onions

Sprinkle of cumin

·    ½ tsp chopped fresh mint

·    Pitta chips or other croutons

Method

1.      In a large pan, heat olive oil and onion until softened.

2.      Add lentils and mix together.

3.      Stir in chopped tomato, chilli and cumin.

4.      Add stock, salt and pepper and stir everything together.

5.      Bring to the boil and then cover and simmer for around 20 minutes.

6.      Remove the lid and stir.

7.      Add more water or stock if necessary.

8.      Simmer for a further 15-20 minutes.

9.      Remove from the heat and mash or blend the soup.

10.  Serve with garnish
