Go Bean! Kat's family friendly bean meals

Kat is the Health in All Policies Officer in the Public Health Team at Barnet Council. Kat is passionate about good food, healthy eating - and beans!

Here are two recipes that I cook for my family regularly – these are meals my kids enjoy too! 

Though this soup is called ‘venetian-style’, in my family we call it Bean Star Soup because I use tiny star pasta in the soup.  Any small pasta will do – orzo, macaroni, etc. The soup gets blended up at the end so it has no visible vegetables or beans. It freezes very well – add the cooked pasta after defrosting and reheating: Venetian-Style Bean and Pasta Soup Recipe | Epicurious

We also all enjoy black bean quesadillas - though it is an Ottolenghi recipe, it really is very simple: just put a can of black beans, some coriander, cumin, salt and lime juice into the blender. You can make the salsa included in the recipe or just throw some avocado into the quesadillas, along with sour cream and cheddar cheese. Delicious, cheesy and healthy!
