Hope is a Data Analyst in the Public Health team at Barnet Council.

I'm vegan, so tofu is something I use a lot. It's high in protein and low fat. Firm tofu is great marinated in a savoury sauce or fried to make it crisp (many recipes here Search Tofu - Vegan Recipe Club) and silken tofu makes a good dairy substitute in creamy dishes. 

My favourite tofu recipes are this quick and easy 'sour cream' style dip Sour Cream - Silken-tofu based - Vegan Recipe Club which is lovely with a salad, and this baked cheesecake Fruity Dairy-free Cheesecake - Vegan Recipe Club. The cheesecake is hands-down the most popular thing I cook - the tofu makes it really light, and nobody believes me when I tell them it's made from beans. 

The photo shows a giant catering-size tofu cheesecake with mango and pomegranate which I made for a party. Within 5 minutes of the first slice being cut, it was all gone!
